This equipment is designed for forming cheeses of the Pasta Filata group.
The machine for forming cheeses such as braided cheese, chechil, mozzarella, and suluguni, with melting and kneading functions, is a universal forming machine. With the help of additional attachments (forming modules), it allows the production of cheese products in various shapes, including mozzarella balls, suluguni discs, and strands for braided cheese.
The forming modules are not included in the base price of the machine and are supplied separately upon request:
— the “Mozzarella” ball-forming module (drum-type doser) makes it possible to produce balls, sticks, and rectangular pieces weighing from 10 to 500 g;
— the “Chechil” cheese strand-forming module is designed for producing cheese strands with diameters from 3 to 20 mm, used for making braided cheese;
— the “Suluguni” forming module is a piston-type doser designed to form cylindrical cheese portions (discs) weighing from 100 to 1500 g.
Uniform hand-shredded cheese curd is loaded into the melter. For greater uniformity, it is recommended to use cheese curd предварительно измельчённую на агрегате измельчения сырного пласта.
The equipment includes:
— a double-jacketed tank for partial melting of the cheese mass with active heating temperature control;
— a screw mechanism for kneading and stretching the cheese mass;
— a control panel based on a programmable controller with an LCD display.
