This equipment is designed for the production of meat or fish mince under vacuum conditions for use in the manufacture of sausages, dumplings, pâtés, and rillettes.
The industrial cutter can be effectively used as a chopping cutter for meat processing, chopping and mixing chilled vegetables, boneless fruit and fish raw materials, preparing confectionery and nut pastes, purées, and other products, as well as a cutter-mixer for preparing mayonnaise sauces, cottage cheese masses, and similar products.
The cutting process is carried out at a fixed knife rotation speed with the possibility of vacuumizing the product to obtain a denser consistency. The mechanized mixer ensures continuous mixing throughout the chopping process and also removes product adhering to the bowl walls.
At the end of the process, tilting the bowl for discharge and returning it to the working position are performed by an electromechanical drive.
The control unit allows operation of all processes and provides monitoring of the product temperature and chopping time.
Additional features of the cutter include:
— the use of three lightweight crescent-shaped knives;
— mounting of the upper bowl lid on the cutter frame;
— a connection with a valve mounted on the lid for adding extra product, liquid, or spices during processing.
The cutter bowl volume is 50 liters. Models with an 80-liter bowl are also available.
Upon request, the cutter can be equipped with an external jacket that allows intensive heating of the product when steam is supplied, or cooling when iced water is supplied. This expands the range of applications to the production of processed cheese, thermized yogurt, cottage cheese, cosmetic products, and other items.
In addition, the cutter can optionally be equipped with a frequency controller for smooth adjustment of knife speed in the range from 1500 to 3000 rpm. This allows more precise compliance with process requirements for products such as cottage cheese masses, processed cheeses with fillers, vegetable and fruit pastes, hummus, and others.
The vacuum cutter is made of food-grade stainless steel.
